Method
  1. Bring the water to a boil in a two quart saucepan.
  2. Add vegetables, mango and turmeric.
  3. Simmer till the vegetables are tender and mixed well.
  4. Use a blender to grind the coconut, cumin seeds, green chillies and salt to a fine paste.
  5. Add as little water as is necessary to facilitate grinding.
  6. Add paste to the vegetables and mix well.
  7. Add enough water to make 4 cups of avail and simmer for 10 mins.
  8. Add curd. Stir and cook for 2 mins and add raw coconut oil and curry leaf.
  9. Stir well. Remove from heat.

Note:

  • Avial is a mixture of curd and vegetables and is prepared with a combination of numerous kinds of vegetables plus green mango, coconut and curd.
  • The vegetables traditionally used are : ash gourd, unripe banana, gourd, bitter gourd, drumstick, cucumber, potato, pumpkin etc.
Ingredients:
3 cups - mixed vegetables (bite sized)
2 cups - water
1 cup - fresh grated coconut
1 cup - sour curd
½ cup - sliced green mango (if available)
1 tsp - cumin seeds
10 - green chillies
½ tsp - turmeric powder
1 ½ tsp - salt
5 tsps - raw coconut oil
1 - sprig curry leaf
