Cauliflower Mushroom Masala

Method
  1. Heat oil in fry pan.
  2. Add mustard and fennel seeds.
  3. When they begin to pop add garlic and ginger and fry till fragrant.
  4. Add onion and fry till golden brown.
  5. Add tomato and all the powders.
  6. Fry till tomato is pulpy and oil separates.
  7. Add cauliflower, mushroom, salt and ¼ cup of water.
  8. Simmer till the vegetables are tender crisp.
  9. Add coconut paste and simmer till the gravy is thick.
  10. Serve hot with chapathi, poori or steamed rice.

Ingredients:
cauliflower - 500 gm, cut into pieces
button mushrooms - 500 gm, halved
onion - 500 gm, sliced
tomato - 250 gm, chopped
grated coconut - 1 cup, ground to smooth paste
vegetable oil - 4 tbsp
mustard seeds - 1 tsp
fennel (saunf) - 1 tsp
garlic - 10 flakes, crushed
ginger - 2 tsp, chopped
kashmiri chili powder - 2 tsp
turmeric powder - ½ tsp
coriander powder - 2 tsp
cumin powder - 1 tsp
white pepper powder - ½ tsp
garam masala powder - 1 tsp
salt to taste
