Method
- Peel the unripe bananas and cut into ½” slices. Cut each slice into 4 pieces.
- Heat the coconut oil in a 7 to 8 skillet and fry the banana pieces until golden brown and crisp. Drain on paper toweling.
- Dissolve the brown sugar in the water.
- Boil for approximately 15 mins.
- Until it almost reaches the hard ball stage degrees.
- It should be a thick syrup.
- Add dry ginger powder and cardamom powder. Stir.
- Dip the banana cubes into the warm syrup. Stir.
- Remove from the syrup and spread on a plate to dry.
- When the pieces are completely cool, the syrup should not be sticky.
- Store the sweet banana pieces in an air tight container.

4 cups - unripe banana pieces
2 cups - coconut oil for frying
1 ½ cups - brown sugar
½ cup - water
¼ tsp - dry ginger powder
¼ tsp - cardamom powder
