Method
- Grind grated coconut, coriander powder and turmeric powder into a fine paste in a blender.
- Mix this paste and salt with a cup of water and heat.
- Quarter the eggs and add to the coconut mixture.
- Cook till the curry thickens.
- Heat coconut oil in a small frying pan and add the curry leaves; let them crackle.
- Add to the curry and your avial is ready to serve.
