Method
Put one cup water in sugar and prepare a syrup of one thread consistency.
Fry gram flour in 100 gms. ghee to a rich golden colour.
Add the nuts, sugar syrup, cardamoms and a few drops of yellow colouring and mix well.
Heat remaining ghee to smoking and put the ghee gradually into the pak stirring all the time.
When the mixture is well blended and the ghee begins to appear on the surface, mix in the essence, remove from fire and put in a greased thali.
Cover with foil and cut into squares while still warm and keep them to set hard.
