Eggs contain about 11 percent of protein. Egg protein is better digested, absorbed, and utilised by the body than protein from any other source. Though eating your egg poached, hard boiled or scrambled is a good option, you can also try these delicious dishes now and then add fun to your meal.
Spring Onion Egg Fry/Poriyal Ingredients:
2 bunches - spring onions/scallions
1 - egg (jumbo size)
3 tbsp - oil
1/4 tsp - mustard seeds
1/2 tsp - cumin seeds
Curry leaves, a few
1 tsp - chilli powder
Salt to taste
Wash the spring onions thoroughly in warm water.
Chop it including the roots and shoots.
Heat 1 tbsp oil in a pan; add mustard seeds, when it splutters, add cumin seeds and curry leaves.
Now add the chopped onions.
Fry for a minute and then add the green shoots.
Add salt, chilli powder and saute.
Add eggs and fry for 4-5 minutes until it reaches a bhurji consistency.
Add oil as you fry.
It prevents the egg from sticking to the pan.
Remove from fire and serve.
