Bean sprouts
Beans like rajma, moong and channa are high in soluble fibre and protein. The beans satisfy your hunger quickly and keep you feeling full for a long while after you`ve eaten.

Warning - Sprout them before you cook to prevent flatulence.

Moong sprouts salad - A healthy family favourite!
Ingredients:
1 cup - sprouted moong (soak in water for a day; then, drain out the water and let stand covered until they sprout)
1/2 cup - cucumber, chopped into small strips
2-3 strands - cilantro, finely chopped
1-2 tbsp - grated coconut, fresh/frozen
1-2 tsp - lemon juice
1-2 tsp - oil for seasoning
2-3 - curry leaves
1/2 tsp - mustard seeds
1-2 - chopped green chillies, medium spiced
A pinch of asafoetida
Salt as per taste
Pomegranate seeds, chopped green grapes, dry fruits

Method:

Combine sprouted moong, cucumber, cilantro, coconut, fruits/dry fruits and salt in a mixing bowl; toss well.
Temper with mustard seeds, curry leaves, green chillies and asafoetida.
Pour lemon juice and mix well; serve as a salad or side dish during lunch/dinner.

Note: Moong beans, apart from being a good source of protein also contain useful amounts of fibre, potassium, and B-vitamins.
