Dal fry
Sous Chef Amit Dash of Courtyard by Marriott shares with us some mouthwatering recipes from different parts of Punjab


Ingredients:


70g - tur dal

50g - channa dal

40g - onion

15g - chopped garlic

4g - whole cumin

20g - tomato

5g - chilli powder

4g - turmeric powder

Salt to taste

5g - chopped ginger

2 - green chilli whole

3 - red chillies whole

40g - ghee

10g - coriander leaves

5g - jeera powder

5g - Punjabi garam masala


Method



  1. Boil both channa and tur dal separately with little salt and turmeric powder. Keep aside.
  2. Heat ghee, and cumin seed, green chilli and red chilli whole.
  3. Then add chopped garlic, saute for some time.
  4. Add chopped onion and cook till golden brown in colour.
  5. Add chilli powder, turmeric powder and salt.
  6. Add chopped tomato and cook for 5 min.
  7. Add both the dal and boil for 5 min.
  8. Finished with ghee and chopped coriander.
  9. Serve hot with tandoori roti.

Chef Amit suggests that the tandoor can be replaced at home by the microwave grill or the readily-available 'sigri'
