Baby corn contains carotenoids that are essential for eye health. Carotenoids also help prevent heart disease, cancer and cataracts.
Serve baby corn sabzi with rice or roti
Ingredients:
12 - baby corn
1 - onion, chopped
2 - tomatoes, chopped
1/2 - capsicum, cubed
2 - green chillies
3/4 tsp - red chilli powder
2 tbsp - coriander leaves
1/8 tsp - turmeric powder
Salt and water, as needed
To temper:
1 tbsp - oil
1 tsp - cumin
Method:
Cut the baby corn to your desired shape and boil with salt and turmeric powder until done.
Heat a pan with oil and temper with the cumin.
Add onion and green chillies and fry till transparent.
Add the cooked baby corn and red chilli powder and cook for 2-3 minutes
Add the tomato and capsicum and fry for 2-3 more minutes in medium flame
Top with coriander leaves and drizzle with some ghee if you want,gives a nice touch…
Fry for a minute and transfer to the serving bowl.
Serve as accompaniment for rice or roti
Note: You can add finely chopped ginger along with onion if you like. You can also pressure cook baby corn instead boiling in an open pan.
