Another nutrient found in baby corn is Vitamin C. Vitamin C helps your body absorb iron better. It builds immunity.
Baby corn pulav
Ingredients:
1 cup - basmati rice
10-12 - baby corn
2 - onion
2 cups - coconut milk
1 - bay leaf
Turmeric powder as needed
1 inch piece - cinnamon
2 or 3 - cloves
2 - cardamom
Salt as needed
2 tbsp - Oil/ghee
To grind:
1/2 bunch - mint leaves
2 pods - garlic
1/4 inch - ginger
2 tbsp - grated coconut
3 - red chilli
2 - green chillies
1/4 tsp - garam masala powder
Method:
Soak rice for 1/2 hour and then drain the water and fry it in 1/2 tsp of ghee for 2 minutes; keep aside.
Cut onion lengthwise and the baby corn into bite sized pieces.
Pressure cook baby corn up to 3 whistles.
Grind all the ingredients under `to grind` table.
If you are cooking directly in a pressure cooker, heat ghee/oil in the cooker and add the whole spices - bay leaf, cinnamon, cardamom and cloves.
Then add the onions, fry till they turn transparent.
Add the ground masala and fry till raw smell disappears.
Then add coconut milk and cooked baby corn and bring to boil.
Add the rice, salt and mix well and cook covered on a low flame, without pressure regulator/weight for 8-10 minutes.
Now pulav is ready.
Serve hot with raita of your choice.
