Pick wisely

Non-starchy, low carbohydrate foods are best suited for diabetics. Not only are they low in calories, they are also high in fibre and full of vitamins and minerals.

We have picked out the vegetables that work wonders for a diabetic`s health.
Low calorie, high-fibre cabbage is good for weight loss and so of great help to diabetics. Raw cabbage has cholesterol-lowering and antioxidants that protect against cancer.

If you`re one of those who can`t stand the odour of cabbage, here`s an easy recipe that makes a complete meal:

Cabbage paratha

1 cup - wheat flour
3/4 cup - cabbage,chopped or grated
2 - green chilli, finely chopped
1 tsp - sambhar powder or red chilli powder
1 tsp - ginger, very finely chopped
1-2 tbsp - coriander leaves, chopped
1-2 tbsp - oil
Salt as needed
Water as needed

Mix flour, cabbage, green chilli, sambar powder, coriander, salt, oil and ginger well and then sprinkle water little by little to make a stiff, non sticky, yet pliable dough.
Roll into thin parathas with generous dusting of flour.
Toast on tawa on both sides until golden brown spots appear.
Drizzle oil if desired.
Serve with any kind of raita or with curd and pickle.
