Aloo poha
A healthy breakfast is undeniably the best way to kickstart your day. While lack of time is a reason most of us quote for not churning out hearty breakfasts, lack of imaginative recipes is another reason that could prevent you from eating a wholesome breakfast.

With your taste buds craving for a tasty breakfast, these recipes may be just what you`re looking for to make your traditional breakfast healthy.

Aloo poha

Pressed rice(poha)-1.5 cup
Boiled peas-4 tbsp
Peanuts-3 tbsp
Green chill-2
Ginger-1/2 inch
Curry leaves-8
Lemon juice-2 tbsp
Sugar-1 tsp
Red chilli powder-1 tsp
Turmeric powder - 1/2 tsp
Musturd seeds-1 tsp
Asafoetida-1/4 tsp
Green coriander- 3 tbsp
Potato-1 (medium)
Oil-4 tbsp


Take poha in a colander and wash well with water,keep aside.
Chop potato, tomato and green chilli in small pieces, crush peanuts coarsly.
Heat oil in pan ,add chopped potatoes and cover with a lid.
Let them cook for 1 minute,take out from the pan and keep aside .
Now add mustard seeds in the same oil, when they start crackling, add asafoetida, chopped green chillies and curry leaves, stir, and add peanuts.
Keep stirring till they become light brown in colour.
Sprinkle 2 tbsp of water again on the soaked poha.
Add turmeric powder in the pan and then add peas stir fry for a while.
Add the soaked poha in it and mix, then add ginger, salt, sugar and chilli powder, and mix
Add lemon juice and chopped green coriander.
Mix and serve with coconut or coriander chutney.

Note: Sprinkle more water into poha if you feel it is too dry.
