1/3 cup oil
1/4 cup white vinegar
1 clove garlic
1 cup fresh basil leaves
1/3 cup cream
1 egg yolk
Salt and pepper
Method:
Combine in bowl breadcrumbs, cheese and parsley.
Melt butter in a saucepan, add crushed garlic, worchestershire sauce and dry mustard. Mix well ans Dip chicken fillets in butter mixture and place in shallow ovenproof dish. Press crumb mixture on top of each fillet Bake, uncovered, in moderate oven for 20 to 25 mins.Serve with Basil Sauce.
Basil Sauce:
Combine in saucepan oil, vinegar, crushed garlic, finely chopped fresh basil leaves and cream, stir until heated through. Add egg yolk and stir until sauce thickens. Do not boil. Season with salt and pepper.
