Method
- Put roughly beaten curds and semolina in a large mixing bowl.
- In a ladle rub together soda and oil, and add salt,.
- Add to mixture, beat very well till light and fluffy.
- Make sure batter is not too thick or thin, but of spreading consistency.
- Grease papercups, or foil cups liberally on the inside.
- Sprinkle very little grated carrot, cheese, and cabbage in each cup at base.
- Sprinkle some sesame seeds and coriander too.
- Pour 3/4th cupful with batter.
- Arrange all cups or as many in a batch in top part of double steamer.
- Water at the bottom should boil, and steam cups.
- Steam with lid on, for at least 15 minutes.
- Remove from boiler, cool for a couple of minutes
- Invert and peel off paper cup carefully.
- Serve piping hot (with green all-purpose or coconut chutney)
- Both accompaniments are already online.
- Or sprinkle some ghee, malagapudi or andhrapudi over them.
- Serve hot with other snacks.
