Method
- In a pan add oil, to that add Jeera (whole not the powder pls), Bay leaf, cinnamon.Once the jeera is brown, add finely chopped Onion, Garlic, Ginger & Green chilly
- In the meanwhile dry grind CINNAMON, SAUNF, CLOVE & ELAICHI.
- After about 10 mins on medium flame heat & you see that the onion etc are golden brown.
- Now add the dry ground Powder and fry it for 7/8 mins. Then add the Tomato paste and little bit of the chopped cilantro.
- Also add the Red chilly powder and turmeric powder
- Now fry this till the tomato paste changes color and the raw smell of the tomato paste disappears, I would say about 10/12 mins.
- Now add the Beans with the liquid please.
- Cover and let it cook on low heat for about 10 mins, now add Jeera Powder-1 tsp and Saunf - 1 tsp.
- Continue to cook it covered on low flame/heat. Add a water if it gets too thick.
- But make sure you let the beans cook on low flame covered for totally 15/20 mins atleast.
- In the last 5 mins add cilantro and salt and taste it.
- You will know if the beans have absorbed the masala.
- It tastes great with Roti / Bread or even serve it on a wheat tortilla with sour cream and shredded cheese - Your mexican delicay!
