Papdi Chi Bhaji (Flat Green Beans)

Method
  1. Wash and dry the papdi. String each bean and break it into 2 or 3 even sized pieces, where necessary removing remnants of strings.
  2. Heat oil in a wok and season with mustard seed, asafetida and turmeric.
  3. Then add the papdi and sauté.
  4. Sprinkle the goda masala, coriander and cumin seed powders over the vegetable and mix.
  5. Also add the jaggery now.
  6. Cook covered for 10-15 minutes, stirring occasionally.
  7. Use a steel plate as a lid for the skillet. On it pour a little drinking water.
  8. As this heats, it help to cook the vegetable.
  9. Finally, add the water on the lid to the bhaji if it requires more moisture.
  10. However unless you require a gravy, allow water to evaporate in the process of cooking.
  11. Serve hot.

Note:
As a variation, a sprinkling of black pepper adds a hint of heat to the bhaji.

Ingredients:
˝ kg - papdi
1˝ tsp - goda masala
1 tsp - coriander seed powder
˝ tsp - mustard seeds
˝ tsp - cumin seed powder
˝ tsp - turmeric
1 tbsp - oil
a pinch - asafetida
an inch wide piece - jaggery
salt to taste
