Brinjal Delight

Method
  1. Heat oil in pan and add cumin seeds and mustard seeds.
  2. Allow it to splutter. Add cut potatoes and brinjal pieces.
  3. Add turmeric, cumin-coriander powder, garam masala powder, ginger paste, garlic paste and salt.
  4. Mix all the seasoning well with the potato and brinjal pieces.
  5. Add little oil if the mixture looks dry.
  6. After seasoning is mixed well with the potato and brinjal pieces.
  7. Add besan and mix it well with the seasoned potato and brinjal pieces.
  8. You may add some more oil if needed.
  9. Add milk and cook till the potato & brinjal pieces turn soft.
  10. Serve this vegetable hot with fresh rotis.
Ingredients:
2 - long brinjals (cut into small pieces)
3 to 4 potatoes (cut into small pieces)
12 tablespoons - white oil
1 tsp - cumin seeds
2 tsp - black mustard seeds
2 tsp - turmeric powder
4 to 5 tablespoons - cumin and coriander powder
1 tsp - garam masala powder
1 tsp - ginger paste
1 tsp - garlic paste
5 to 6 tablespoons - besan (gram flour)
2 cups - milk
salt to taste
