Brinjal/Eggplant Sabji

Method
  1. Cut the brinjals into circular/semi-circular slices.
  2. Keep them in water after chopping them, so that they don't get brown in color.
  3. Fry chopped onion with 3-4 teaspoons of oil.
  4. Fry till onion is slightly pink in color.
  5. Add chopped tomatoes to it and fry them too.
  6. Add salt, turmeric powder, spices, ginger paste and garlic powder to it.
  7. Stir it properly.
  8. Keep this paste separately.
  9. Heat the pan and add 3-4 teaspoons of oil.
  10. Add the chopped brinjal slices, and fry them till they are properly cooked.
  11. You can also steam them by putting lid on the pan, so that they are cooked properly.
  12. Add the paste of tomoto and onion prepared, to the fried brinjal.
  13. Stir it well.
  14. Add sugar as per the taste.
  15. Stir it well till the vegetable is cooked.
  16. Add corriender leaves for taste.
  17. Serve it in a bowl with lemon.
  18. Now brinjal sabji is ready for serve!!
Ingredients:
chopped brinjal - 6 to 8 nos
chopped onion - 1 or 1.5 nos
chopped tomatoes - 2
turmeric powder - 1/2 tsp
red chilli powder - 1/2 tsp
ginger paste - 1 tsp
garlic paste/powder - 1/2 tsp
sugar - 1 tsp
chopped/garnished corriender leaves
spices to taste
salt as per taste
