Method
- Cut away the stalks and slit the brinjals into flour, keeping them joint at the base.
- Grate the paneer.
- Heat 2tsp of oil and roast coriander seeds, Bengal gram dal ,black gram dal,red chilies and asafetida.
- Cool and powder coarsely.
- Mix the powder with salt and paneer.
- Stuff the brinjajs with this mixture.
- Heat the remaining oil and add mustard.
- When it crackles, add the brinjals.
- Cover and cook slow flame till brinjals are tender.
- Serve hot with steamed rice and dal.

paneer - 100 gm
small tender brinjals - � kg
oil - 4 tbsp
coriander seeds - 3 tsp
bengal gram (chana) dal - 1 � tsp
black gram (urad) dal - 1 � tsp
red chillies - 6
asafoetida - � tsp
mustard seeds - 1 tsp
salt to taste
