Brinjals Stuffed with Paneer

Method
  1. Cut away the stalks and slit the brinjals into flour, keeping them joint at the base.
  2. Grate the paneer.
  3. Heat 2tsp of oil and roast coriander seeds, Bengal gram dal ,black gram dal,red chilies and asafetida.
  4. Cool and powder coarsely.
  5. Mix the powder with salt and paneer.
  6. Stuff the brinjajs with this mixture.
  7. Heat the remaining oil and add mustard.
  8. When it crackles, add the brinjals.
  9. Cover and cook slow flame till brinjals are tender.
  10. Serve hot with steamed rice and dal.
Ingredients:
paneer - 100 gm
small tender brinjals - � kg
oil - 4 tbsp
coriander seeds - 3 tsp
bengal gram (chana) dal - 1 � tsp
black gram (urad) dal - 1 � tsp
red chillies - 6
asafoetida - � tsp
mustard seeds - 1 tsp
salt to taste
