Method
Make the brinjals into 2 slits to form a cross and drop them immediately in salted cold water.
Now, without oil, fry ginger, coconut, peanuts, cloves and grind them with jaggery and little water.
Heat oil in a pan and add cut-onions, brinjals and let the ingredients be covered till tenderly touched.
Add the grinded paste, chilli powder, salt, water and cilantro and simmer on low till the oil is released.
Serve hot with rice or chapathi.

ginger - 200 gms
peanuts - 50 gms
jaggery - one fist
coconut - small piece
cloves - 4 nos
chilli powder - 2 tsp
onion - 2 nos
oil - 3 tsp
cilantro - 1/2 cup
water - 1 1/2 cup
salt to taste
