Stuffed Brinjal (Eggplant) Curry

Method
  1. Wash brinjals, cut away the stalk. Slit each brinjal into 4, keeping them joint at the other end.
  2. Combine onion, aamti masala, salt, jaggery and 1 tbsp of oil together.
  3. Stuff the brinjals with the masala mixture. Arrange them in a flat microwave safe dish, bigger ones on the outer side and smaller ones in centre.
  4. Pour the remaining oil over them. Cover and cook full power for 8-10 minutes. Stir and cook uncovered for 5-7 minutes stirring once after 3-4minutes.Serve hot with chappathies or steamed rice.
Ingredients:
Small purple brinjals - 1/2 Kg
Finely chopped onions - 1 cup
Aamti masala* - 2 tsp or to taste
Salt - to taste
Jaggery powder - 1 tbsp optional
Oil - 2-3 tbsp
* If aamti masala is not available, use 1 tsp sambar powder mixed with 1 tsp garam masala.
