Method
- Cook rice and allow it to cool in a broad bowl or basin.
- Heat oil , fry the seasonings add red chillies, green chillies, curry leaves and fry for a minute.
- Add Turmeric powder, asafoetida powder, grated carrot, grated coconut and salt ,squeeze lemon juice and stir well.
- Pour over the cooled rice and mix well.
- Garnish with finely chopped coriander leaves and fried ground nuts.
- Serve hot with green chutney.
Variation:
Fry grated ginger 1/2 tsp, freshly chopped tomatoes of 2 tbsp to the seasonings.

turmeric powder - 1 tsp
green chiiles - 9

cooking oil - 2 tbsp
grated fresh carrot - 2 tbsp
grated fresh coconut - 1 tbsp
freshly cut corriander leaves - 1 tbsp
fresh curry leaves - 2 strings
fried ground nuts - 2 tbsp
salt to taste
For Seasoning:
mustard seeds - 1 tsp
bengal gram dal - 2 tsp
urad dhal - 2 tsp
zeera seeds - 1/2 tsp
asafoetida powder - 1 pinch
