Vegetable Curry with Coconut Milk

Method
  1. Grind coconut with sufficient water & remove thick milk from it & keep aside.

  2. Grind the greens with chillies & ginger garlic & keep aside.

  3. In a pan put 2 tbsp oil & fry all the dry garam masalas & sliced onions.

  4. Saute onions till light pink.

  5. Then add all the cut vegetables with 1/2 cup water cover it & cook till vetables are done.

  6. Add tomatoes, greens paste & fry till you get a good aroma.

  7. Towards the end add 2 tbsp of coconut paste & coconut milk.

  8. Cook for 10 minutes on low fire.

Garnish with corriander. This goes well with chapatis & rice.

# rice is preferably basmati

Ingredients:
2 onions
2 carrots
2 potatoes
3 tomatoes
1/4 cabbage
8 bunches corriander
4 bunches poodina
2 green chillies
1 tbsp ginger garlic paste
2 sticks dalchini(cinamon)
2 cardammom
1/2 tsp saijeera
1 whole coconut
