Ginger and Hing (Asafoetida) Khichuri
Method
- Wash and soak rice for 10 minutes.
- Heat oil or fat in a pressure cooker or in a frying pan.
- Add bay leaf and cumin seed. Stir for a second.
- When cumin seed crackled add grated coconut into it.
- Add hot water in proportion of one is to two. (Water should be double of rice).
- Add crushed ginger and hing (asafoetida).
- Now add soaked rice and sprouted green gram and salt to taste.
- Cook it till rice is full done.
- Remove it from fire, pour ghee evenly over it.
- Serve hot with dohi, papad, ghee and achar.
Ingredients:
raw rice - 500gm
spourted green gram - 25gm
ginger - 1.5
inches
hing/asafoetida - 1 pinch
cumin - 1 tsp
bay leaf - 2 nos
grated coconut - 1cup
refine oil or ghee - 2 tbsp
salt to taste
