Method
- Chill soda well till required.
- Chill lychees long enough to be very cold.
- Grind in a mixie till well crushed.
- Add softened icecream.
- Run till icecream lychee mixture is smooth
- Just before serving:
- Pour some icecream lychee mixture into a tall glass.
- Pour chilled soda over it.
- Allow to fizz, while pouring.
- Serve individual glasses.
- Top with a sprig of mint stuck to rim of glass.
- Top with a whole lychee for each serving.
