Sweet Kesar Rice

Method
  1. Wash and soak the rice for about 20 minutes.
  2. Boil the rice in sufficient water.
  3. After a boil, simmer.
  4. Cook till the rice is three fourth done.
  5. Drain the water and cool completely in a plate.
  6. Take sugar in a saucepan.
  7. Add enough water to just cover the sugar and cook on a medium flame.
  8. Stir continuously to make a syrup of one thread consistency.
  9. Add saffron to the lukewarm milk and soak it for 15 to 20 minutes.
  10. Lightly heat 2 tbsp ghee and fry the raisins and keep aside.
  11. Fry the cashewnuts in ghee till golden.
  12. Lightly heat 1 tbsp ghee in a heavy bottomed vessel and add the rice.
  13. Add the sugar syrup and soaked saffron to the rice and mix gently.
  14. Keep the vessel on a pre-heated tawa on a low flame for about 10 minutes.
  15. Serve garnished with fried raisins and cahewnuts.
Ingredients:
250 gms - basmati rice
100 gms - sugar
15 to 20 strands - saffron soaked in ¼ cup - milk
3 tbsp - ghee (for deep frying the dry fruits)
12 to 15 - raisins
12 to 15 - cashewnuts (halved)
