Carrot Lemon Rice

Method
  1. Cook rice and allow it to cool in a broad bowl or basin.
  2. Heat oil , fry the seasonings add red chillies, green chillies, curry leaves and fry for a minute.
  3. Add Turmeric powder, asafoetida powder, grated carrot, grated coconut and salt ,squeeze lemon juice and stir well.
  4. Pour over the cooled rice and mix well.
  5. Garnish with finely chopped coriander leaves and fried ground nuts.
  6. Serve hot with green chutney.

Variation:
Fry grated ginger 1/2 tsp, freshly chopped tomatoes of 2 tbsp to the seasonings.

Ingredients:
basmathi rice - 1 cup
lemon - 2 medium sized
turmeric powder - 1 tsp
green chiiles - 9
red chillies - 2
cooking oil - 2 tbsp
grated fresh carrot - 2 tbsp
grated fresh coconut - 1 tbsp
freshly cut corriander leaves - 1 tbsp
fresh curry leaves - 2 strings
fried ground nuts - 2 tbsp
salt to taste

For Seasoning:
mustard seeds - 1 tsp
bengal gram dal - 2 tsp
urad dhal - 2 tsp
zeera seeds - 1/2 tsp
asafoetida powder - 1 pinch
