Tomato Cucumber Pickups

  1. Put paneer in a glass bowl.
  2. Add chilli, herbs, sugar, salt, pepper, mustard.
  3. Mix well, not crushing paneer to a paste.
  4. Arrange cucumber slices on a work surface, in single layer.
  5. Divide mixture between slices of cucumber.
  6. Press down mix in centre, gently.
  7. Place a slice of tomato over each cucumber round.
  8. Transfer to a large serving plate, keeping layers intact.
  9. Use a metal spatula to help life each �sandwich�.
  10. Sprinkle some more salt and pepper over tomatoes.
  11. Garnish with chopped coriander.
  12. Serve cold.

Makes: 2-3 servings

2 - tomatoes, sliced into rounds
1 - cucumber, peeled, sliced into rounds
100 gms - paneer(cottage cheese), grated
1 - green chilli, finely chopped or crushed
1 tsp - mixed herbs or mint or herbs of choice, finely chopped
1 tbsp - coriander leaves, finely chopped
1 tsp - prepared mustard
� tsp - sugar powdered
salt to taste
pepper to taste
