Method
- Put paneer in a glass bowl.
- Add chilli, herbs, sugar, salt, pepper, mustard.
- Mix well, not crushing paneer to a paste.
- Arrange cucumber slices on a work surface, in single layer.
- Divide mixture between slices of cucumber.
- Press down mix in centre, gently.
- Place a slice of tomato over each cucumber round.
- Transfer to a large serving plate, keeping layers intact.
- Use a metal spatula to help life each �sandwich�.
- Sprinkle some more salt and pepper over tomatoes.
- Garnish with chopped coriander.
- Serve cold.

Ingredients:
2 - tomatoes, sliced into rounds
1 - cucumber, peeled, sliced into rounds
100 gms - paneer(cottage cheese), grated
1 - green chilli, finely chopped or crushed
1 tsp - mixed herbs or mint or herbs of choice, finely chopped
1 tbsp - coriander leaves, finely chopped
1 tsp - prepared mustard
� tsp - sugar powdered
salt to taste
pepper to taste
