Mutton with Arbi

  1. Peel the arbi and keep these whole.
  2. Heat half the quantity of oil and fry the arbi pieces till alight golden brown.
  3. Remove and keep aside. In the same oil, add the mutton pieces and fry till all the water evaporates.
  4. Mix in the spices, ginger garlic paste and the salt and stir fry on medium heat stirring from time to time. Add the remaining oil from time to time. Cook till a fine aroma rises.
  5. Mix in the tomato puree and stir gently. Now mix in the arbi pieces and add two cups water.
  6. Cover with a lid and cook on low fire till the mutton pieces are tender and the preparation has only little gravy.
  7. You could add a little more water if the mutton pieces are not tender.
Mutton - 500 gms
Ginger-garlic paste - 2 tbsp
Tomato puree - 1 cup
Oil - 3 tbsp
Arbi, big size - 300 gms
Coriander powder - 2 tbsp
Jeera powder - 3 tsp
Haldi powder - 1/2 tsp
Red chilli powder - 2 tsp
Salt to taste
