Paneer Corn Sabzi

Method
  1. Put paneer pieces in a glass bowl.
  2. In a small cup mix olive oil, salt, mint, coriander.
  3. Add curds, green chilli, mint, garlic, stir well, to blend.
  4. Pour marinade on paneer, toss till all pieces are well coated.
  5. Cover and keep aside for 10 minutes or till required.
  6. Heat oil in a deep frying pan, add ginger, stir fry for a minute.
  7. Add boiled cornkernels, marinated paneer, stir fry for 2-3 minutes.
  8. Pour into serving dish.
  9. Garnish with chopped spring onion and grated paneer.
  10. Serve piping hot, with naan, paratha, etc.

Ingredients:
250 gms. paneer (chopped in cubes)
1 cup fresh con kernels, boiled or microwaved till soft
1 small capsicum, deseeded, chopped
2 sprigs mint leaves finely chopped
1 flake garlic crushed finely
1 green chilli finely chopped
1 tbsp. coriander leaves finely chopped
1 sprig spring onions finely chopped
1 tbsp. paneer grated
2 tbsp. fresh thick curds
1/2 tsp. lemon juice salt to taste
1 tsp. olive
1 tbsp. oil
