Paneer Grape Salad

Method
  1. Mix all ingredients for marinade with a fork or whisk in a small bowl.
  2. Put paneer cubes into a large salad bowl.
  3. Pour marinade over pieces, toss with hands, till all pieces are well coated.
  4. Cover and keep aside for 25-30 minutes.
  5. Put fruit, olives in a large salad bowl, keep refrigerated till required.
  6. Heat oil in a pan, add chopped capsicums, stirfry for a minute
  7. Add cabbage, saute again for a minute.
  8. Add paneer, toss gently, saute, till excess moisture evaporates.
  9. Take off fire, allow to cool to room temperature.
  10. Just before serving, add paneer to fruit.
  11. Toss well and serve.

Making time: 30 minutes
Makes: 3-4 servings

Ingredients:
200 gms - fresh paneer, chopped into cubes
100 gms - green grapes
100 gms. - black grapes
1 - orange, segment, peeled, deseeded
1 - small red capsicum finely chopped
3 or 4 - black olives, sliced into rounds or halved
1 - tender green cabbage leaf, shredded roughly
1 tbsp - olive oil
salt to taste

For Marinade:
1 tbsp - green allpurpose chutney
1 - tiny flake garlic, crushed
1 tbsp - peanuts, roasted,skinned crushed
1/2 tsp - cumin seeds, crushed
1/2 tsp - mustard seeds, crushed
1/2 tsp - sugar powdered
1/2 tsp - chilli flakes
1/2 tbsp - basil leaves, finely chopped
1 tsp - lemon juice
