Method
- Grill the capsicum and chop roughly.
- Chop the carrots very thinly as well as tomatoes and onions.
- Heat a non-stick pan, add olive oil.
- Then add onions and fry until brown.
- Then add tomatoes, all powders, oregano cayenne and stir well.
- Add the carrots, grilled capsicum & salt to taste.
- Cook for 3-4mins, then serve with pasta or with chappatis.

garlic - 1clove
carrot - 1/2
oregano - 1/2 tsp
basil - 1/2 tsp
curry powder - 1 tsp
papprica - 1/4 tsp
cayyene pepper - 1/4 tsp
olive oil - 2 tbsp
salt to taste
