Method
Make a paste of fresh parsley or basil leaves plus garlic plus walnuts plus Olive oil. This is our sauce for the pasta
Boil pasta. Salt the water used for boiling pasta and also adds a little oil so the pasta does not stick to each other.
Now in a pan add oil and garlic.
When garlic is nicely browned add onions and cook it till golden brown.
Then add bell pepper and thinly sliced carrot. Add salt and pepper
Now add the sauce and cook for 5 to 10 mins.
Also add some crushed walnuts for a crunchy taste. Add salt according to taste and add some parmesan cheese.
Decorate it with some spring onion greens!!!

pasta

extra virgin olive oil
