Drumstick-Potato-Brinjal Gravy

Method
  1. Cut onions into thin long.
  2. Heat a pan and add 4 tablespoons full oil.
  3. Once hot, add thered chillies whose stem have been slightly slit.
  4. Let it darken, then addmustard seeds and very little jeera and curry leaves.
  5. Add onions and fryin medium flame till it becomes transparent.
  6. Then add the drumstick and fry for 2 to 3 minutes.
  7. Add the brinjal and fry for 2 minutes in slowflame.
  8. Then add the potatoes and fry for 3 mins.
  9. Once the potato gets slightly cooked, add turmeric powder, desired quantity of chillipowder, salt, pinch of jeera powder, salt and the pounded garlic.
  10. Save a tablespoon of grated coconut and add the rest into the cooking vegetables.
  11. Mix well and let it cook for a minute or two.
  12. Add very little water that is required to cook the drumstick, close it and simmer for sometime.
  13. Stir occassionally.
  14. Once cooked, add the rest of the coconut.
  15. Mix well, keep it in medium flame for a minute and serve.
  16. The recipe can be made with a combination of any 2 of the 3 vegetables as well.

1 - drumstick
1 - potato
1 - brinjal
1 cup - finely grated coconut
2 - onions
5 to 6 - podsof garlic (pounded)
3 to 4 red chillies
1/2 teaspoon - turmeric powder
1 pinch - jeera powder
curry leaves
mustard and jeera seeds
salt to taste
oil
