Method
- Boil chopped potato in plenty of water.
- When soft, drain, saving water.
- Run potatoes, chilli, mint, flour in mixie.
- Add ½ cup stock to make a smooth paste.
- Heat butter, stirfry chopped veggies.
- Add rind, 3 cups stock, bring to a boil.
- Add potato paste, stirring continuously.
- Add salt and pepper as per taste.
- Bring to a boil, simmer for 3-4 minutes.
- Serve hot, topped with fresh cream if desired.

½ - green chilly
½ - lemon, rind grated
1 tbsp - cabbage finely chopped
2 to 3 - brocolli florets, finely chopped
1 tbsp - carrot, finely chopped
1 tbsp - plain flour
1 tsp - butter
pepper to taste
salt to taste
