Quick Potato Rice

Method
  1. Dice potato into cubes.
  2. Slice onion lengthwise.
  3. Heat oil in a pan.
  4. Add mustard seeds, red chillies and curry leaves for seasoning.
  5. When mustard seeds splutter, add jeera, cashew and raisins (let it brown a little).
  6. Then add ginger-garlic paste and coriander powder.
  7. Add onion and fry till light golden brown.
  8. Add potato, turmeric powder and fry for 3-5 mins till light brown.
  9. Add rice in the cooker, add potato mixture, salt and enough water to cook.
  10. Before serving, add lemon juice and mix well.
  11. Serve hot with chips or onion raitha.

potato - 2
rice - 1 cup
lemon - 1/2 (optional)
onion - 1
mustard seeds - for seasoning
red chillies - 5 to 6
ginger & garlic paste - 1/2 tsp
jeera - 1/2 tsp
raisins, cashew - 1 tsp (optional)
coriander powder - 1/2 tsp
turmeric powder - 1/2 tsp
curry leaves - few
salt to taste
