Cinnamon Rice Pudding

Method
  1. Combine rice, milk, sugar, butter, cinnamon sticks and vanilla in a 2-quart saucepan.
  2. Cook over medium heat until thick and creamy, 20 to 25 minutes, stirring frequently.
  3. Remove from heat; remove cinnamon sticks and top with whipped cream and fresh assorted berries, if desired.
  4. Sprinkle with ground cinnamon.

Yield: 6 servings

Ingredients:
3 cup - cooked medium grain rice (basumathi or sona masoori)
3 cup - milk
1/2 cup - sugar
1/4 cup - butter
2 - cinnamon sticks
1 t - vanilla extract
ground cinnamon powder
berries and whipped cream, optional
