Semiya Vegetable Pulao

Method
  1. Boil about 8 cups of water. Add ½ tsp salt and the semiya. Boil for 1-2 minutes till the semiya is cooked.
  2. Drain the water, and rinse the semiya with cold water and drain (like noodles). This will reduce the starch and the end product will not be sticky even though the fat reduced.
  3. Meanwhile, place all the ingredients from oil to cardamom in a microwave safe bowl and cook without covering on full power for 5 minutes, stirring once, after 3 minutes.
  4. Add all the vegetables, sprinkle 1 tbsp of water, cover and cook for 2 minutes. Add tomato puree, mint and coriander leaves, cook for 1 minute.
  5. Add the cooked semiya and salt. Mix gently, cover and cook for 2-3 minutes, till the contents are heated.
  6. Serve hot.
Serves 3
Ingredients:
Semiya - 2 cups
Oil - 3 tsp
Onion - ½ cup, sliced
Ginger - ½ tsp, chopped
Garlic - ½ tsp, chopped
Green chillies - 2, chopped
Cloves - 3
Cinnamon - 2 pieces
Cardamom - 3
Carrots - ¼ cup, cut into ¼ ' dice
Cauliflower - ¼ cup, cut into small florettes
Tender green peas - ¼ cup
Tomato puree - 1 tbsp
Mint leaves - 1 tbsp, chopped
Coriander leaves - 1 tbsp, chopped
Salt - to taste
