Khaman Sandwiches

Method
  1. Follow instructions of packet to make dhokla.
  2. But make two plates instead of one, using half better each time.
  3. Each round should be thin and same sized.
  4. Cool each plate, pry out each round carefully with knife and spatula.
  5. Place one round on serving plate.
  6. Apply green chutney to cover top surface.
  7. Place other piece over this press down gently.
  8. Apply sauce to second layer top.
  9. Sprinkle onion, coconut, sev, coriander all over sauce in that order.
  10. Cut neatly into bite-sized diamond shapes.
  11. Serve immediately.

Note:
If topping is omitted, and the sandwiches are cut in bread sandwich style triangles, they can be served as make believe sandwiches itself.

Making time: 45 minutes
Makes: 28-30 pieces (depending on size)
Shelflife: After topping best fresh, untopped one day

Ingredients:
1 packet - khatta dhokla mix
� cup - green all purpose chutney (refer chutneys recipe)
2 to 3 tbsp - tomato-chilli or tomato ketchup
1 tbsp - freshly scraped coconut flakes
1 tbsp - fine bhel sev (optional)
1 - onion, finely chopped
1 tbsp - coriander leaves, finely chopped
