Slice all the vegetables into thin long pieces.
Wash the mushrooms and cut into thin slices.
Peel garlic and pound it with fresh red chillies in a mortar or electric mixie.
Heat oil in a frying pan.
Add the ground chilli, garlic paste and fry till raw smell goes.
Add the vegetables and fry till it is cooked.
If necessary add some water to the vegetables.
Add soya sauce and salt to taste.
Serve it hot with Steamed Thai Fragrant Rice.
