Potato Gulkand

Method

  1. After cooking the potatoes, mash them well.

  2. Heat 100 grams of ghee in a non stick pan in reduced flame till it melts.

  3. Add kaju & raisins to it and fry till it becomes golden brown.

  4. Then add grated coconut to it and fry well till raw flavor goes.

  5. Add mashed potatoes and Keep stirring in medium flame for 10 to 15 minutes till raw flavour goes.

  6. Add sugar & stir well till it no longer sticks to the sides of the pan.

  7. Add the remaining ghee.

  8. Mix ground cardamom, clove and nutmeg.

  9. Add kesar color Borneal Flakes (Pachai Karpooram), saffron & essence and serve hot or cold.

Ingredients:
Potato : 250 grams
Grated fresh coconut - 4 table spoons
Ghee 120 grams
Sugar 300 grams
Kaju 25 grams
Raisins 25 grams
Kesarcolor 1 pinch
Cardamom 2 pieces
Clove 1 piece
Nutmeg 1/4 piece
Saffron few strands
Borneal Flakes (PachaiKarpuram)
Rose essense 1/4 tsp
