Ash Gourd Kootu

Method
  1. Peel the outer skin of the ash gourd.
  2. Cut into half and scrape off the seeds, inner soft pulp a little.
  3. Cut the vegetable into 1 inch square pieces.
  4. Cook them in medium flame openly.
  5. Heat a kadai, fry the items mentioned from 1 to 4 until they turn golden brown.
  6. Cool it and grind them coarsly.
  7. Set this paste aside.
  8. Now grind coconut tamarind, curry leaves.
  9. Mix it with the cooked vegetables.
  10. Place this mixture on the heat to boil.
  11. When it starts boiling, add the ground masala paste, add salt & sugar.
  12. Stir well.
  13. Check the texture of the mixture, if it looks too thick, add little water.
  14. Allow this to boil for 2 to 3 mins stiring in between.
  15. Then remove and serve hot.
  16. Tastes delicious with rice, rotis, chappathis and also pooris.
Ingredients:
ash gourd - 1 medium size
bengal gram dhal - 3 tbsp
black gram - 1 tbsp
red chilly - 6
green chilly - 4
grated coconut - 2 tbsp
cinnamen stick - 1" piece
tamrind pulp - 1 tsp
coriander leaves - few leaves
musterd - 1 tsp
sugar - 1 tsp
oil - 1 tsp
powdered salt to taste
