Cauliflower Special

Method

  1. Boil the cauliflower as a whole in salted water (remove the leaves before and do not overcook)

  2. Stuff the cauliflower with the ground paste. Keep it warm in a slow oven.

  3. If you are not using an oven just set it aside.

  4. In a broad frying pan add the butter and flour and cook for a minute

  5. Add the tomato ketchup and 1/4 teacup water and boil for 1 min.

  6. Add the salt chilli powder, sugar.

  7. Just before serving pour the hot sauce over the cauliflower.

  8. If cooking on gas place the califlower over the sauce in the pan and simmer for a while gently placing some sauce over the cauliflower for about 5 minutes.

  9. Decorate with boiled peas and potatofries.

Serves 4.

Ingredients:
1 medium sized Cauliflower
1/2 teacup boiled Peas
100 grams french fries for decoration (optional)

For Paste:

1/2 bunch fresh coriander
2 green chillies
1 1/2 tablespoons grated fresh coconut
1/2 teaspoon sugar
salt to taste
juice of half lemon

For the sauce:

1/2 teacup tomato ketchup
2 teaspoons butter
1 level teaspoon plain flour
salt to taste
chilli powder 1/2 teaspoon
1/2 teaspoon sugar
