Chikoo Phirni

  1. Soak Basmati rice in water for 30 minutes.
  2. Drain and grind to a smooth paste with fresh water.
  3. Mix the rice paste with 1 cup of milk. Boil the remaining milk.
  4. Add the rice paste and cook stirring till the mixture boils again.
  5. Add sugar and cook on low heat for 5 minutes.
  6. Cool the rice and milk mixture completely and mix in the sapota pulp.
  7. Add cardamom powder.
  8. Serve chilled, garnished with shredded pistachio.

Serves:4 to 6

3 tbsp - basmati rice
1 liter - milk
1 cup - sapota pulp
tsp - cardamom powder
pistachio to garnish
