Chocolate Crumb Flan

  1. Mix together crumbs, castor sugar, butter, cocoa and cinnamon with fingertips.
  2. Press into a deep pie dish.
  3. Press a plate (a little smaller than the pie dish) on top of the crumb mixture so that it forms a smooth, even crust.
  4. Reserve excess crumbs for decoration. Chill for at least an hour.
  5. Break china grass into small pieces.
  6. Soak in cup hot water till quite soft.
  7. Heat and stir till dissolved.
  8. Add milk and sugar and bring to a boil.
  9. Remove from heat and mix in essence.
  10. Keep aside till lukewarm, but be careful it does not set.
  11. Pour into cooled flan case. Chill to set.
  12. Sprinkle reserved crumbs on pudding in a decorative design.
  13. Arrange sliced banana and halved glace cherries.
1 cup - biscuit crumbs (plain glucose or marie)
1/3 cup - melted butter
2 tbsp - cocoa
cup - castor sugar
1 tsp - powdered cinnamon

For the Filling:
15 g - china grass
cup - sugar
litre - milk
1 - banana, thinly sliced
3 drops - vanilla or almond essence
a few glace - cherries
