Climbing Spinach and Papaya Aambat

Method
  1. Cook spinach and papaya together with little water till soft.
  2. Fry chilies in 1 tsp oil till crisp and grind to a smooth paste with coconut and tamarind.
  3. Add the ground paste to the cooked spinach. Add salt to taste.
  4. Add water to form a curry of thick pouring consistency.
  5. Simmer for 2-3 minutes and remove from fire.
  6. Heat oil in a small fry pan and fry onions till golden brown.
  7. Add the fried onions to the curry and mix well.
Serves 4-6
Ingredients:
Chopped spinach and stalks - 4 cups
Papaya cubes - 1 cup
Grated coconut - 2 cups
Dried red chilies - 4-5
Tamarind - size of small marble
Salt - to taste
Oil - 2 tbsp
Onion - � cup, finely chopped
Wash, drain and chop the spinach leaves. Cut tender stems into 5 cm long pieces. Use under ripe papaya.It must be firm, just turning pale yellow. Peel it, remove the seeds and chop the flesh into 2 cm cubes.
