Method
Wash and soak rice in water 1-2 hours.
Drain and spread on a cloth till almost dry.
Dry grind in mixer to the consistency of fine semolina.
Peel and grate the cucumber.
Queeze out all the water and grind the coconut with this water to a coarse paste.
Mix the ground rice with the coconut paste.
Add rest of the ingredients.
The consistency of the batter should be slightly thicker than Idly batter.
Grease a deep plate (or idly plates) and pour the batter in it.
Steam for 15 minutes.
Cool slightly and serve cut into pieces with a blob of butter.
Do not cut if steamed in Idly plates.
