Method
- Wash and cut the sweet potatoes into small round pieces.
- Heat ghee in a heavy bottomed vessel and add the sweet potatoes and sugar.
- Cook on a low flame for 15-20 minutes, stirring continuously till the potatoes are tender and the water from the sugar has been absorbed.
- Cover with a lid and simmer for 5 minutes.
- Place the vessel on a preheated tava and simmer for another 5 minutes.
- Serve with Rajgiri puris.

½ kg - ratoli carrots (sweet potatoes)
4 to 5 tbsp - ghee
¼ kg - sugar
