Farmhouse paneer (cottage cheese)

  • Roll the paneer pieces in cornmeal, coat them completely.
  • Fry the paneer pieces in hot oil, sprinkle salt and pepper on the pieces as they cook.
  • When the paneer pieces are well browned, add onion, garlic, cumin, coriander powder and nutmeg.
  • Add vinegar and stock or water.
  • Cover and simmer for 5-10 mins.
  • Add chilli powder and simmer for a few more mins.
  • Add the almonds and olives.
  • Season with salt and pepper.
  • Garnish with coriander leaves. Serve hot.
  • Ingredients:
    500 gms. paneer (cottage cheese) cubes
    Cornmeal (yellow maize flour)
    2-3 tbsp. oil
    Salt to taste
    1/4 tsp. freshly ground black pepper
    1/4 cup finely chopped spring onions
    1 clove garlic, minced
    1/4 tsp. cumin powder
    1/4 tsp. coriander powder
    a pinch of nutmeg powder
    1/4 cup red vinegar
    1/4 cup vegetable stock or water
    1 tsp. red chilli powder
    2 tbsp. blanched slivered almonds
    2 tbsp. washed, drained and sliced green olives
    A few sprigs of fresh coriander
