Gobi Gajjar Bheendi Achar (Mixed Vegetable Pickle)

Method
  1. Chop the cauliflower and carrots into small equal portions.
  2. Leave the chillies and ladies fingers whole.
  3. The ginger should be cut lengthwise.
  4. Peel the garlic cloves and leave them whole.
  5. Take a big vessel. Mix together all the vegetables with sufficient salt and turmeric powder.
  6. Add the mango masala. Mix well.
  7. Boil the water along with the sugar.
  8. Once the sugar dissolves remove from gas.
  9. Let it cool till it is lukewarm.
  10. Add this water to the mixed vegetables.
  11. Add acetic acid and mix well.
  12. Keep this out for 3 hours then store in a glass container.
Ingredients:
� kg - cauliflower
� kg - carrots
125 g - mango masala (readymade)
100 g - small lady fingers
2 � cups - water
� cup - sugar
10 to 12 - green chillies
10 to 12 pieces - ginger
12 cloves - garlic
� tsp - turmeric powder
1 tsp - acetic acid
salt to taste
